Saving Money Challenge -- Ideas For Vegetarian Meals & Goals For Next Week

Frugal Makes Cents

I didn't do a darn thing this week except go to work and sit on my couch.  While sitting, I did run across a number of new frugal things to try.

I know a lot of us are trying to cut back on meat consumption, either for health reasons, or budget reasons, or a combination of reasons.  I've been doing some research this week, and I found some pretty cool options for new vegetarian meals to try out on my family.
And here's a another list of garden resources.

The free paper cutting templates on this site are too cool.  I think I'm going to do a few for my kids.

Cinnamon roll baked oatmeal.  Need I say more?

And my goals for next week, copied from last week:
  • Walk 4x swim 1x
  • Get all of my handwritten pages typed up for the contest, and start on the proposal.
  • Make pizza dough, pizza sauce and rolls for the freezer.
  • Finish making Valentine's wreath for the front door.

We are making salad our main part of the meal more and more often -- loading it up with avocado, onions, mushrooms, pomegranate seeds, orange slices, carrots, chick peas, etc. (not all at the same time, mind you!). I have been making Greek yogurt-based dressing by putting in odds and ends of onion, avocado, orange slices,sesame and flax seed with a bit of rice wine vinegar, EVOO, etc. I whiz it up in my little Oscar. It is amazing how filling a spinach salad can be when it is really loaded up like that!

  2. Hi Alex -- I eat that same type of thing every day for lunch. DH is a iceburg/ranch type of guy so I have to have my fancy salads at lunch!

    I love the greek yogurt dressing idea!
